Can the software simulate hollow core fibres?

Yes, but poorly. To obtain good hollow core guidance the cladding holes need to be very large, and close to touching - the holes are in fact more hexagonal with very thin strands of silica between the holes. These sort geometries cannot be simulated by the CMU. If your work is mainly on hollow core fibres, other software might be more appropriate.
